How Istanbul’s burger scene evolved
A decade ago burgers meant fast food; today dry-aged patties, house sauce labs, and artisan brioche push gourmet positioning. Smash technique, thin patty, crisp edge, fast service, dominates with younger diners. See our help center for step-by-step guides.
Plant-based mains are no longer side items. That diversity complicates prep and menu engineering, capacity planning is essential.
Neighborhood picks
Kadıköy Moda/Caferağa: indie brands, street energy, late service. Beşiktaş Akaretler/Abbasağa: after-work crush, fast turns expected. Nişantaşı/Etiler: premium ingredients, wine and cocktail pairing. Sign up to try OpenRez free.
Karaköy/Galata: tourist-local mix; weekend lunch peaks. Anatolian side Ataşehir/Bağdat Avenue: family formats and larger dining rooms.
What to order and when to go
The first three minutes after a smash burger leaves the plancha matter; speed is flavor. Double patties and custom sauces slow the line, single patty is faster at peak.
Weekdays 6–7 pm are usually calmest. Friday nights and Sunday brunch burger menus sell early; check online queue or reservation options.
Capacity management for burger operators
Queue UX is half the product. SMS turn alerts or a short waitlist beat a physical line. Combining dine-in, takeaway, and delivery on one kitchen line raises overcommit risk.
OpenRez waitlists and slot-based booking flatten peaks; walk-ins and holds share one live map.
